Well!! I just found you after reading the comments over at the fat-nutritionist.
Like you I suffer from chronic pain that is barely tempered by narcotics. So I have had to make some drastic changes to how I approach cooking and food.
One of my favorite comfort foods is bbq chicken. I take a boneless skinless chicken breast and toss it in my crock pot with some sweet baby ray’s bbq sauce (enough to cover) then I let it simmer until done and I can shred it. Then I keep a bowl of this in the fridge and when I’m hungry I put a potato in the microwave to bake (usually 6 or 7 minutes) smash it open and then put the shredded chicken on it. Sometimes I put a drizzle of ranch over it because, omg I could live in ranch dressing
I usually have a salad with it too. It’s simple, very satisfying, and doesn’t require much work!
That BBQ chicken recipe sounds awesome! I’ll have to give it a go sometime.
